Pro S is the traditional German knife. High quality steel and forging assure you that it will be sharp and stay that way.
A boning knife is an essential kitchen tool especially in dealing with chicken. The flexible blade makes easy work of getting all the meat off of the bones.

Very sharp and comfortable gripFirst off, I love the customer service, had an issue with the 1st knife and they resolved. Secondly, the knife is sharp and I’m able to maneuver effortlessly. The comfort of handle was very important and I did a lot of research online to pick the best boning knife.

Great boning knifeThis is a knife I didn’t know I needed until I used it. I always thought this was really supposed to be used for just fish or chicken, but you can use this knife for so many other purposes! My friend showed me how to peel fruit with it like oranges and that was a game changer! It cuts so cleanly and with it’s thin profile you can really get a nice slice, whether it’s removing meat from a bone, or skin from fruit or fish, it’s a knife that can be really handy to have in the kitchen when you need it.

My favorite Western-style boning knifeI really like the weight and balance of this knife. It is easy to maneuver around bones. It also holds an edge extremely well.
Professional S is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a looks almost new.

My New Secret WeaponMy Zwilling knives have been carefully selected, one by one, during the past couple decades, and each new one is always a welcomed addition—and this one is no exception. I bought for one specific purpose: to trim whole packer briskets, hog legs and other large cuts that I smoke. Although the Shun version is often mentioned as the ideal, to me, I think this knife is a very appropriate tool for the job, and for less money.

Nice lengthThe 5.5 inch boning knife is a nice length for control while trimming and filleting meat. The blade is sturdy yet flexible and razor sharp so it effortlessly glides through your trimming jobs. This knife also works well for segmenting citrus fruit. Made from specially formulated steel it will retain its sharpness longer and is corrosion resistant.

Best knife for removing silver skin from venisonThis is a perfect knife for multiple uses. It removes silver skin from venison with ease. Perfect boning knife. Beautiful construction. When I received the shipment if was packaged very carefully. I was amazed at the care taken to protect the product. I have owned and used Zwilling pro knives for over 20 years. Wouldn't use anything else!

The Pro 'S' boning knife is one everyone should have, they just don't know it! With a straight full bolster, it is easy to hold when removing skins or cutting meat from bone. I used it recently to cut the meat from spare ribs and it worked like a dream! So much more can be done with this knife.
