More than meets the eye, the potent core of SG2 micro-carbide powder steel is protected by a stunning 100-layer flower Damascus pattern. MIYABI’s innovative, CRYODUR® ice-hardening process locks in the blade’s long-lasting sharpness.

Scapel like sharpnessThis santoku has scalpel like sharpness. It makes chopping and slicing a breeze. Many people end up preferring it over a chef knife.
The birchwood handle is so unique. It is very comfortable with its traditional Asian D shape plus the birchwood material makes it very slip resistant. I love how the handle will become very personal as it absorbs oils from your hands and develops its own personality.
The 100 layer damascus blade is made from a very sharp SG2 steel core that not only makes it very durable but incredibly beautiful.
If you want an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

heaven in your handI absolutely love this knife. Have had the Birchwood chef for a few months and thought Id treat myself to another pretty birchwood shape. First off, the handle is georgous! I know it requires a bit more attention because it is really wood and can swell and shrink if its wet too long,But that said, its such a beautiful knife I'd take extra good care of it any way! the Santoku shape is new to me and I am now forever a fan! Chopping versus slicing with a chef, much better contact area with the cutting board and cleaner cuts of the vegetables. It is light weight but does the job as well or better than other knives. My hubby thinks the handle is a bit slight for him... Great he will stay away from my knife!

I'd give 6 stars if I couldI fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy. This santoku is the real deal. The shape of the blade is like the ones I grew up with. Good for chopping. Enjoy this knife for a lifetime.

Will cut ripe tomatos into paperThis is a very sharp knife! The sharpest I have ever used. It is so sharp that it literally sounds and feels different, cutting through vegetables. Almost silent when hitting the cutting board because the minimal pressure that is used for slicing.

Excellent Santoku KnifeI have and love several other high end knives, both Japanese style and "western". I bought the Miyabi Birchwood Santoku as a gift for my wife who loves Japanese style knives but does not love the daily care routine rhat some of them require. This knife is beautiful, we'll balanced, ad of course sharp. But what really blows me away is how long it retains an edge.
Long story short, the gift to my wife became a gateway drug and we are already at 4 other Miyabi knives (Birchwood and black) on our kitchens counter.

BEST KNIFE EVERUnarguably the best knife I've ever used. I bought this as a collaborative item with Supreme, and I admit, I had not heard of the brand before. Now, I will definitely be making more purchases. I need a knife sharpener for it so that will for sure be the first thing I grab! The only thing I fear, is how my knife can be supported regarding the warranty given that it is a special collaborative item.. if something were to be wrong with the knife, I'd hate to get sent a generic version of the knife.

beautiful knifeI love the Birchwood line. The Japanese artistry and craftsmanship is present from one end to the other. The handle is a unique piece of wood with each one being a one of a kind. The more I use the knife the more beautiful it gets. The blade is beautifully layered with high carbon steel that is sharp like a razor and is very easy to maintain. All of the marks of high quality cutlery come with this knife. I love the santoku shape for all of my chopping and vegetable prep.
What type of knife edge is used on the Seki City, Japan products? Also, what is the edge angle in degrees?

I have read the handle is porous, how do you protect the wood and will it retain the color through the life time of the knife?

You can treat & protect the wood with certain types of oils. This will stave off warping and help with color retention, though that shouldn't be a huge concern.
