Ultimate SlicerThe perfect slicing knife is sharp enough to cleanly slice through any meat or fish without tearing or changing the texture. This is that perfect knife. Scapel-like blade with its beautiful damascus design will not only slice cleanly but will hold its edge incredibly well.
The birchwood handle is so unique. It is very comfortable with its traditional Asian D shape plus the birchwood material makes it very slip resistant. I love how the handle will become very personal as it absorbs oils from your hands and develops its own personality.
If you want an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

Heirloom Quality; Commercial PerformanceThe first thing to know about this knife is that it's absolutely beautiful. But as you take a closer look from different angles, you begin to truly appreciate the craftsmanship and skill that went into making it. It's an heirloom quality knife, and one that stands out in a kitchen. That said, it's not just for show. This edge absolutely glides through fish and meat. It's got that sharpness that leaves a glossy cut; the sharpness that actually makes food taste better because it truly slices and doesn't tear. I don't use this knife every day, but when I do use it, it helps me enjoy the experience of cooking.

Sashimi - no sweat. Carpaccio - with ease.I fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy. And this slicing knife is the ultimate for raw fish and meats. Enjoy these knives for a lifetime.

Incredibly SharpDo you ever wonder how sushi chef's are able to slice and cut sashimi, sushi rolls and vegetables with perfection? Once you use this knife you'll wonder no more. This Slicing knife is incredibly sharp thanks to it's G2 steel core that is harder than other steel allowing it to be honed to a katana scalpel like sharpness and stay that way use after use. Then 100 layers of steel are added to create a beautiful damascus pattern topped off by the Birchwood handle that provides a nonslip, secure and comfortable grip.

Beautiful and ExcellentI just purchased this slicer to add to my Miyabi Birchwood collection (5 knives so far). It is not only just a beautiful knife, but it is exactly what I needed for making sushi and cutting fish. It makes all the difference in the world when working in the kitchen - just like all my Miyabi knives. I don't know how I functioned without them in all my years of cooking, but just so glad that I have them now!

Work of art with sharpness!This knife is a piece of artwork, I love the wooden handle. The blade is unbelievably beautiful, I leave it out on the counter on display to show it off. People always comment on how cool the blade looks. I’ve had Cutco the past, Don’t waste your money on those,they’re junk. These knives are unbelievably sharp. I highly recommend the investment. I use these several times a week and they’re still sharp.

Yes, this is very similar to a yanagiba (yanagiba is a very general term for a long knife with a thin blade profile). It will work well for any type of slicing. The birchwood series of knives is double beveled (sharpened on both sides), whereas many traditional sushi knives are single beveled, though for most people this might even be preferable.
