Description
This kiritsuke is an all-purpose knife traditionally used only by the Executive Chef in Japanese kitchens. This double-beveled knife with angled tip is best suited to Japanese push or pull cuts and is a great sashimi knife, as it offers the finest in precision cutting. Its straighter edge makes it the ideal knife for chopping and dicing fruits and vegetables.

More than meets the eye, the potent core of SG2 micro-carbide powder steel is protected by a stunning 100-layer flower Damascus pattern. MIYABI’s innovative, CRYODUR® ice-hardening process locks in the blade’s long-lasting sharpness.

Something specialI received this knife as a gift from my company for doing a cookout. The knife is extremely sharp and very light for its size. I enjoy using it as a brisket knife or cutting anything larger than a full size tomato. Make sure you oil the handle. I wish there would have been a coating on it from the manufacture.

Beautiful knife!This knife is beautiful and at 9.5 inches, is capable for the majority of jobs. Compared to the gyutos and santokus, this one has more weight on the blade end and makes some chopping tasks easier to perform. (Similar feel to a nakiri) the SG2 core and Damascus layers feel solid and still thin enough to slice through foods. I like the straight portion of the knife closer to the heel as the majority of my cutting is push cutting and chopping. This has a high price tag but is definitely worth it if you can afford it.

Poor Quality controlI ordered this product from Cutlery and More, It was shipped bent, the cladding is three times higher on one side than the other of the core steel, and the mosaic pin is extremely off center… One of the worst knife finish I’ve ever seen In my career, not even considering the price. I’m in the process of trying to get a replacement. Might change my opinion if things are remedied. Until then just buy a Shun!

Quality Controlthe look is great, obviously. i feel the balance is off when you try to hold it where the tang and birchwood meet, some are specific about this.. maybe i’m not that powerful when it comes to the julienne or chop, but as Myabi is generally advertised to be one of the sharpest, i expected more, especially on its first use. i would also love to generally state that these knives are art pieces. although they are performance-worthy, they are not chef-worthy in my eyes. They’re extremely expensive to have in your professional kitchen, i would mind that in your consideration to purchase. As a home cooker, these sets bring a great blend of style, sharpness, beauty, and uniqueness for anyone to see you preparing with Myabi, even the one using it. just make sure to hand wash these knives only, no dishwasher, and do NOT use any regular honing steel to sharpen these knives, they are extremely hardened. use only the Myabi Honing Steel.

Best knife ever!This knife is absolutely gorgeous. This is my 3rd Miyabi and 2nd in the Birchwood collection. The quality of Miyabi is unmatched. Knives come out of the box razor sharp. The first time I used this knife I cut chives and it was a dream. Can't wait to order another Birchwood Miyabi. Most definitely my favorite knife brand!

Best knifeBest knife that I have purchased. Nicely balanced, love the style beauty on the blade. But let not forget what important I love how sharp it is and how is multi purpose knife, i as chef use it for so many thing but what I love about it is the cut that can do with this knife. It can compare with no other.

Stunning.The 9.5 inch Kiritsuke is simply stunning. Not only does the knife feel good in your hands but feels amazing in use. Simply put - not all knives are equal and this is ahead of all the rest. Having used Shun/Kikuichi/Global/Wusthof for years I can say with confidence I’m sticking with Miyabi.
What is the blade height of this knife, I wish all knife makers would include blade height in the specifications or descriptions of their knives, it is very important to people with large hands when working on a cutting board?
