More than meets the eye, the potent core of SG2 micro-carbide powder steel is protected by a stunning 100-layer flower Damascus pattern. MIYABI’s innovative, CRYODUR® ice-hardening process locks in the blade’s long-lasting sharpness.

Great hybrid knifeI fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy.
The ricking santoku can easily become the most used knife in your kitchen. It give you the best of a western style chef's knife and the stability of a santoku. Worth consideration no matter your cutting style.

It rocks and chops, so sharp knife!A great Miyabi knife, it rocks quietly for it is so sharp and functionality is awesome..!!!
I'd use this every day and never needed a lot of sharpening because it stays sharp, honed it once in a while. Perfect for every cutting needs.
Don't forget The potent core of SG2 micro-carbide powder steel is layered in a Tsuchime finish. This exquisite, hand-hammered effect helps prevent food from sticking. Each knife features a hand-honed blade finished with a true katana edge, a homage to the samurai swords made in Seki centuries ago.

Versatile KnifeThe rocking santoku is such a versatile knife. The curve in the blade allows you to rock like you would with a chef knife, but because it has a "flat bottom" too, it's very easy to chop. Both cutting techniques are ideal for fruits and veggies. It has a scalpel-like blade sharpness that is a result of a thin blade with a very small edge angle.
The birchwood handle is so unique. It is very comfortable with its traditional D shape plus the birchwood material makes it very slip resistant. I love how the handle will become very personal as it absorbs oils from your hands and develops its own personality.
The 100 layer Damascus blade has a very sharp SG2 steel core that not only gives it incredible edge retention but makes it very durable and beautiful.

great knife......amazing new shapeI first purchased Miyabi Birchwood knives a few years ago. I was drawn to them for several reasons. The smoothe handle is very comfortable to hold. Since its wood each one is unique and looks better and better with use. The "super steel" used in the blade is very strong and stays sharp for a long time. When it needs to be sharpened the high carbon content makes it easy to maintain. The artistry extends from the handle into the blade. The Damascus style design and the Katana style edge watermarking shows the attention to detail when making these blades. I recently added the rocking santoku to my collection. The curve is great for slicing and mincing making quick work of my herbs and veggies. Its a great hybrid of the Western chefs knife and the traditional Japanese santoku.

Hybrid Chef's Knife and SantokuA chef's knife is a go-to for basically everything and while A Santoku knife is the best blade for chopping but you're unable to go into a rocking motion with a Santoku...but in steps a rocking Santoku and now you have an amazing blade for both chopping and rocking! The Birchwood series is one of my favorites to use because the SG2 steel core has the sharpest edge and stays that way use after use. Over the top design touches are the 100 layers of steel to create a damascus pattern and of course the Birchwood handle that is nonslip and super comfortable.

Pure BeautyI Have owned many a knife in my time, but this knife is stands out like no other. It is a tool of Pure Beauty and Elegance. The pattern on the handle is like that of a mountain range while the blade is like a mountain stream running strong and true. This is a Knife that I will truly cherish and when the time comes pass down.
