Not just for fish!I love this knife! We live where Salmon, Rock Fish and Halibut are a mainstay so a good fillet knife is a necessity in our kitchen. This knife doesn't disappoint. Has amazing flexibility, is super thin, runs down the fish bones cleanly and easily takes the skin off without taking any flesh.
Not only does this knife make filleting and skinning a fish easy but it also works great to remove rind from a lemon or lime, oranges and grapefruits. I even use it to cut around the pit of a mango. If you need to skin a tomato this knife can do that as well!

Luxe filet knifeI’ve been using Professional S knives for over 20 years, and was initially skeptical of the different bolster shape on the Pro series. But when the 7” Pro filleting knife arrived, I was struck by how the thinned-our bolster offsets the thin, flexible filet blade, and how useful it is for fingertip control. One nice feature, and also a point of caution: the full length of the blade is sharpened, and is quite thin where it meets the finger choil, so take care not to choke up *too* much. (See photo.)

Best. Knives. Ever.I bought this knife to complete my Zwilling Pro knife block set. I’ve never owned a knife like this, but this Pro set has been life changing. Did I need professional grade knives as a “home chef”? Probably not. But am I glad I went this route? Absolutely! These are by far the best knives I’ve ever used. I love how easy it is to cut through a variety of textures using these knives and can’t imagine ever going back to anything else. I look forward to using these for years to come. Such a fantastic investment!

Love these knivesHave had the Pro S series for almost 20 years. Found the filet knife and could pass it up. Fits nicely with the rest and love the sharpness and weight of the knife. Cuts perfectly every time. Highly recommend. Have other sets we replace every five years (my guest knives for when people visit), but these always last.

Outstanding Filet KnifeThis knife is indispensable for tasks that require precision such as filleting salmon and slicing citrus for intricate presentations. The knife has a longer length and great flexibility without being unwieldy. It has same quality and durability as the rest of my Zwilling Pro line knives. Recommend without reservation.

Great first impressionsThis is my first swilling knife, but it will not be my last. I have used the knife and handful of times so far, but have been thoroughly impressed with each use. The blade is extremely sharp out of the package. It is perfectly weighted and my hand is comfortable while handling it. The knife feels so precise when using it, and the blade is extremely flexible for getting a close cut - even with awkwardly shaped, hard to reach areas. Overall, I’m thoroughly impressed and have no issues with the knife at all.

what an excellent knifeI have use many good quality knifes. But, the moment I tested a Zwilling pro, my parameters to measure a knife changed from good quality to excellent quality.
what is difference between boning and filleting knives, I need knives costing for trimming beef chicken pork tendons tissue and bone

Hi, boning knives may feature flexible blades or stiff blades with a sharp pointed tip designed for separating meat from joints and bones. A member of the boning knife family would be the filet knife, it is a thin, flexible knife specifically designed for slicing and preparing fish, particularly whole fish. The differences between a boning knife and a fillet knife. A boning knife has a narrower blade and is used for de-boning meat, while a fillet knife is thinner and more flexible, ideal for removing skin and bones from fish.
