Chimichurri Sauce
This fresh and flavorful chimichurri sauce is ready in a flash and levels up just about any meal. Blend it a little thicker and chunkier and it’s delicious as a dip or blend it to a pouring consistency and use it as a sauce for grilled vegetables or meat.

INGREDIENTS
- 2 cups fresh flat-leaf parsley leaves (from about 1 bunch parsley)
- ¾ cup fresh cilantro leaves (from about ½ bunch cilantro)
- 1 small shallot, roughly chopped
- 2 small garlic cloves, roughly chopped
- 1 small Thai red chile, stemmed and seeded (optional)
- 1 lime, zested and juiced
- 1-2 tablespoons red wine vinegar
- 1 teaspoon kosher salt
- ½ teaspoon ground cumin
- ⅓ - ½ cup extra virgin olive oil
DIRECTIONS
- Place the parsley and cilantro leaves in the chopper accessory of the ZWILLING XTEND Hand Blender. Add the shallot, garlic, chile (with or without seeds), lime zest and juice, vinegar, salt, and cumin. Cover and pulse the blender several times to chop the ingredients.
- Add the oil in batches and blend to incorporate. Continue adding oil until you reach the desired consistency, either spoonable or pourable. Taste and add more seasoning if desired.
Tip
Start with a base of flat leaf parsley and change things up by subbing out cilantro for oregano, thyme, mint, or rosemary.
