Overnight Granola Bowls with Yogurt, Apple and Pear

INGREDIENTS
Granola (yields leftovers to store)
- 2 cups wholegrain oats
- 3.5 oz chopped nuts (e.g. walnuts, almonds, hazelnuts)
- 1.75 oz grated coconut
- 3 tbsp liquid honey (or maple syrup)
- 4 tbsp liquid coconut oil (1.4 oz)
- 1 tsp cinnamon powder, to taste
Bowls
- 1 1/4 cups plain yogurt (or plant-based alternative)
- 3 tbsp milk (or plant-based alternative)
- 1 small apple
- 1 small pear
- 2 tbsp raisins
- 1 tbsp liquid honey (or maple syrup)
Topping
- 1.4 oz fresh berries
HOW TO MAKE IT
- Preheat the oven to 350°F (320°F fan). Place the non-slip silicone mat on a baking sheet.
- For the granola, combine all the ingredients in a bowl and mix well. Spread the mixture evenly on the silicone mat and bake for about 15-20 minutes, turning every 5 minutes so the granola is evenly browned. Remove from the oven and let cool.
- Mix the yogurt with the milk and honey in the bowl. Wash, quarter, and core the apple and pear. Grate the fruit quarters directly into the yogurt mixture.
- Pour some yogurt fruit mixture into two small bowls. Then add some raisins and some granola. Repeat the process. Finish with yogurt. Cover, vacuum seal, and refrigerate overnight.
- Garnish with fresh berries and enjoy the next day.
Tip
Granola is perfect for prepping in advance. Simply vacuum any leftovers to protect them from moisture.
